
The MULTIVAC Cooling@Packing System, which was exhibited at Anuga FoodTec 2024, is a vacuum application for cooling bakery products, which integrates the cooling process into the thermoforming packaging machine. This enables sensitive bakery products to be packed without compromising quality. By packing the product immediately after baking, a higher level of freshness and longer shelf life can be achieved. Energy costs for product cooling can also be saved, and shorter baking time means that production capacity can be increased. And last but not least, one of the many features of this solution is the reduced space requirement in bakeries.
Operating method of the Cooling@Packing System Bakery products are currently cooled by means of a cooling spiral at ambient temperature, or alternatively by passing through cooling tunnels. This needs a large amount of space in the production site, as well as a high level of investment. There is also the danger of product contamination during the slow cooling process. The MULTIVAC Cooling@Packing System enables the hot bakery products (e.g. baguettes, ciabattas, breads, biscuits etc.) to be loaded into the packs directly after the oven, using hygienic loading robots.
The product's inherent moisture evaporates due to the evacuation process in the chamber, and the resulting vaporisation energy therefore cools the product. The use of several chambers in sequence makes it possible to reduce the temperature from 95°C to approx. 30°C within a few seconds.
